More Pumpkin

So I tried my hand at making homemade cinnamon-rolls and they came out pretty darn tasty! They were made with pumpkin but didn't really taste like it. So I decided to googled the positives of pumpkin. So if you eat one of these delicious not so great for you treats you can say "well, at least I had some fiber, antioxidants, beta-carotenes and vitamins A, C, K and E while I ate it!!"

Simple Garlic and Spinach Pasta

Sometimes you want pasta but you don't want the boring old marinara that comes with it. Just dice up some chicken and saute some garlic and spinach and a little parmesan cheese and YUM-O! A quick and delicious meal. Not to bad for ya either if you use smart balance or whole wheat pasta like I do!

Fiesta Chicken Pot Pie

MMM YUM, hot and bubbly with cheese! This chicken pot pie won't leave you hungry that's for sure. Chicken, cheese, salsa, corn and a flaky crust.

Dinner Time

Delicious chicken rolled up with swiss cheese and spinach, simmered in chicken broth! YUUUMMY! The kids even loved it. Hiding veggies is ALWAYS a good way to get them into your little ones!

Celebrating DELICIOUS Pumpkins!

My husbands ABSOLUTE favorite thing is pretty much ANYTHING with pumpkin. So, when the holidays start to get near I start baking with pumpkin. Here are my Pumpkin cupcakes with creamcheese frosting and my OH SO YUMMY Spiced Pumpkin bread!

A YUMMMMMY Creamy Chicken Lasagna

My husband HATES Ricotta cheese, so whenever I make lasagna he COMPLETELY picks it apart. UNTIL, I started making this wonderful creamy chicken lasagna. Instead of Ricotta I use low fat cream cheese and shredded chicken. It is seriously DELICIOUS!

I thought I would add in some more yummy treats into the mix. These DELISH cheesecake brownies didn't last to long in my house after I made them!

So, I decided to see where my hobby could lead me. My favorite thing to do is bake, cook and watch the smiles on peoples faces while they eat and enjoy MY food. Cupcakes are my favorite because they are so cute and so easy to deal with. You can do so many different things with them!

I also enjoy trying new recipes for my family to try out. I try new sweets and savory dishes all the time. My kids always call my dining room "Mom's Restaurant"!
